Snail caviar has an earthy taste that differentiates it from the traditional one, besides having a much more compact texture.
The process of breeding snails for the extraction of roe is expensive and difficult: only 50% of snails survive to it. Due to these difficulties and its purity, the price of this caviar reaches 1,500 euros per kilo.
